Banana Chocolate Loaf

This is Lockdown comfort baking at its finest (and a pleasingly thrifty use of old bananas!)
It takes an hour to bake, but only 5 mins to throw together.
We are always too impatient to let it cool before cutting and scoffing......so I can never get a nice tidy photo, but this cake is all about flavour not aesthetics so I don’t mind too much.....and the smell that fills your kitchen while it bakes is off the charts!
ONE BOWL BANANA LOAF CAKE RECIPE
(Note: If you haven’t got electric beaters, or if your bananas aren’t very soft, you’ll need to mash them first).
🍌 Preheat oven to 170 degrees C and line a 2lb/450g loaf tin with baking paper.
🍌Melt 150g salted butter/non dairy spread.
🍌Into a mixing bowl put:
3 peeled over-ripe bananas
the 150g melted butter
175g caster sugar
3 medium eggs (or 2 large)
and beat with electric mixers until the bananas are mashed and the mixture is smooth.
🍌 Add 200g self raising flour and up to 100g of nuts,raisins or dark chocolate chips, and mix very briefly - just enough to combine everything.
🍌Scrape the batter into the lined loaf tin and if you feel like it, slice another banana in half lengthways and place the two halves on top of the batter.
🍌 Bake for 1 hour until the top is crispy and caramelised and the cake is cooked through (it might need an extra 10 mins).
🍌Leave to cool before slicing (if you can bear to wait!!!)
