Banana Chocolate Loaf

This is Lockdown comfort baking at its finest (and a pleasingly thrifty use of old bananas!)
It takes an hour to bake, but only 5 mins to throw together.
We are always too impatient to let it cool before cutting and scoffing......so I can never get a nice tidy photo, but this cake is all about flavour not aesthetics so I don’t mind too much.....and the smell that fills your kitchen while it bakes is off the charts!
ONE BOWL BANANA LOAF CAKE RECIPE
(Note: If you haven’t got electric beaters, or if your bananas aren’t very soft, you’ll need to mash them first).
๐ Preheat oven to 170 degrees C and line a 2lb/450g loaf tin with baking paper.
๐Melt 150g salted butter/non dairy spread.
๐Into a mixing bowl put:
3 peeled over-ripe bananas
the 150g melted butter
175g caster sugar
3 medium eggs (or 2 large)
and beat with electric mixers until the bananas are mashed and the mixture is smooth.
๐ Add 200g self raising flour and up to 100g of nuts,raisins or dark chocolate chips, and mix very briefly - just enough to combine everything.
๐Scrape the batter into the lined loaf tin and if you feel like it, slice another banana in half lengthways and place the two halves on top of the batter.
๐ Bake for 1 hour until the top is crispy and caramelised and the cake is cooked through (it might need an extra 10 mins).
๐Leave to cool before slicing (if you can bear to wait!!!)
