Banana Pancake

(Makes 8-10)
In a food processor put: 1 ripe banana, 1 cup milk, 1 egg, 1 cup self raising flour, and 1/2 teaspoon baking powder.
Blitz (or mash/whisk) everything together just enough to form a smooth batter.
Brush a nonstick frying pan with butter or oil and heat it up.
Spoon the batter into the frying pan, cooking 3-4 pancakes at a time. They’ll need about a minute each side......turn over when the edges crisp up and the top looks bubbly.
Serve with a big dollop of peanut butter, sliced bananas and a drizzle of maple syrup. .......or leave them to cool and eat them plain as great on-the-go snacks.
Note: you can make oaty banana pancakes by swapping the flour for porridge oats, a blitzing them into flour in the food processor before you add everything else. You need to double the baking powder to make them rise though!)
