'Trash' Starter Recipes
Hate the idea of throwing away your lovingly nurtured sourdough starter?!
Well here are some ideas of what to do with the 'trash' or 'throwaway' starter......
Sourdough ‘trash’ Pizzas/Flatbreads
This is the speediest, easiest flatbread recipe ever, and makes awesome pizza bases for your favourite toppings.
Mix in a bowl 50g throwaway/trash starter, 100ml warm water, 10ml olive oil, a pinch of salt and 170g strong bread flour.
Knead for a few seconds to form a smooth dough. Divide into 4 pieces. Roll out as thinly as possible with a rolling pin and some extra flour, and then cook in a hot dry frying pan for a minute or so each side until it bubbles up and looks and slightly charred.
Top with any pizza toppings you fancy and pop under the grill to melt the cheese – or serve as they are in place of pitta or flatbreads.
Sourdough ‘trash’ Pancakes
Whisk together 150g throwaway/trash starter, 200ml milk (non dairy works well too) and 150g self raising flour with a pinch of salt to make a smooth batter.
Leave the batter to rest for 20 minutes and then fry tablespoonfuls of it in oil or clarified butter to make 10 small American style pancakes.
